Potato & Bacon Salad with Honey Mustard Dressing

This is a hearty salad which serves 2 people as a main meal.



  • 6 small new potatoes
  • 6 rashers bacon
  • 1 bag salad leaves (something with rocket works well)
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp wholegrain mustard
  • 2 tsp honey
  • salt & pepper


  1. Boil the potatoes in salted water until tender, drain, and allow to cool slightly.
  2. Grill the bacon and drain on kitchen paper.
  3. Mix the ingredients for the salad dressing.
  4. Chop the potatoes into large chunks and slice the bacon into strips. Add to the salad leaves.
  5. Add salad dressing, mix and serve.

Serves 2.
