Beef Vindaloo

  • 1 tbsp cumin seeds
  • 1 tsp cloves
  • 1 tsp black peppercorns
  • seeds from 15 green cardamoms
  • 1 1/2 tsp salt
  • 1/2 tsp sugar
  • 6 tbsp garlic-ginger paste
  • 1 red onion, finely chopped
  • 5 tbsp white wine vinegar
  • 3 whole dried chillies
  • 1 tbsp tomato paste
  • 1 kg stewing beef
  • 2 tbsp vegetable oil
  • 400g canned tomatoes
  • 1 red onion
  • 25 curry leaves
  • 2 tsp black mustard seeds
  • 1 large Indian bay leaf (tej patia)
